Zucchini Corn Casserole •  This is a great way to get rid of all that zucchini from summer gardens!
  • 8 eggs, beaten
  • 2 medium zucchini, shredded
  • 1 cup grated cheese
  • 1 quart fresh, cut off the cob sweet corn
  • 1 cup vegetable oil
  • 2 cups pancake baking mix or flour
  • 1 teaspoon salt
  • 1 quart (2 lbs) browned ground beef with onion to taste
Combine everything and bake 1 hour at 350 degrees F. Add extra cheese on top before serving. Frozen corn does not work as well as fresh.
