Clean sweet corn and cut from cob into a large roasting pan sprayed with cooking spray. Pour half and half over corn; dot with butter.
Bake at 325 F. When the edges of corn begin to bubble and boil, time for 1 hour. Stir occassionally. Remove from oven and cool completely.
Put into freezer bags or boxes. To serve, thaw corn and gently reheat. This is great for company and holiday guests.
